Celebrate British Tomato Fortnight with a Quick & Flavourful Twist on Pizza

If you’re looking for an easy, crowd-pleasing recipe that makes the most of juicy British tomatoes, you’re in the right place. This Air Fryer Puff Pastry Pizza by one of our talented chefs, Ryan Smith, is a crisp and flaky take on traditional pizza — and it’s ready in minutes.

Air Fryer Puff Pastry Pizza:

Ingredients:

  • Shop bought puff pastry
  • 2 tbsp passata
  • 8 black olives
  • 1 small courgette
  • 16 sundried tomatoes*
  • 30g grated mozzarella
  • Basil
  • Extra virgin olive oil
  • 1 egg

Method:

  1. Roll the puff pastry out and cut to a size that will fit in your air fryer, prick all over with a fork, brush with eggwash and refrigerate for 1 hour
  2. Set air fryer to 180C and cook puff pastry for 6 minutes
  3. Spoon over passata then arrange courgettes, olives, tomato halves and mozzarella
  4. Return to air fryer for 6 minutes
  5. Leave for 1 minute, take out of basket and finish with extra virgin oil and basil

Shop bought dried tomatoes will work fine but you can make your own using the dehydrate setting on your air fryer.

Ingredients:

  • 400g cherry tomatoes
  • 1 tbsp extra virgin olive oil
  • Pinch of salt
  • Ground black pepper
  • ½ tsp dried oregano
  1. Cut tomatoes in half and toss all ingredients together
  2. Lay in a single layer in your air fryer basket, set to 60C and cook for 4 hours
